Racking mead
This weekend it's time to rack the lemon and separate a gallon of it to keep dry. Then I can back sweeten the rest of it. Going to try an experiment to carbonate some. Getting closer to bottling time!

Two more
Got two more batches of mead. Started the Christmas mead its a mulled mead and a blood orange. Really wanted to add chocolate to this one but not sure I wanna wait two years for it. Thoughts? Think it'll be worth it?

Koumiss bottled!
After few weeks bottled the first batch of koumiss. Completely different than it started that's for sure. Hard to explain the flavor you'd have to experience it for yourself. I have more ideas for the next batch!
